They've only just released their Galaxy Tab today, and Samsung is already planning for their next tablet which will supposedly come with Android Honeycomb on board. If Samsung releases their next tablet 1 year or less from now (time to market for smartphones or tablets has decreased to about 9 months), then we should be expecting Android Honeycomb to be announced at I/O next year, just like Froyo was. Galaxy Tab came with Froyo, so it makes perfect sense.
If you're going to buy the Galaxy Tab, then you can expect the Gingerbread update, but not Honeycomb. While Froyo doesn't seem to offer a perfect tablet experience, hopefully Gingerbread will, so you won't have to worry much. However, I don't think Gingerbread update will come until January or February next year.
So are you going to buy a Galaxy Tab or would you rather wait for other options?
